Step-by-Step Preparation for Buffalo Chicken Egg Rolls
Creating Buffalo Chicken Egg Rolls at home might seem a bit daunting at first, but fear not! With this step-by-step guide, you'll master the art of crafting these delicious snacks that are perfect for any gathering or a cozy night in. Let’s dive into the preparation!
Create the Buffalo Sauce
First things first, let’s whip up your buffalo sauce. In a small skillet, combine 1 cup of hot sauce, ½ cup of butter, 1 teaspoon of Worcestershire sauce, a dash of cayenne pepper, and some salt and pepper to taste. Heat the mixture over low to medium heat, whisking until the butter melts and everything blends beautifully. This step provides a spicy kick that has everyone raving about your egg rolls! Once combined, set this sauce aside to cool slightly while you prepare the filling.
Prepare the Chicken Filling
Now it’s time for the main event. In a mixing bowl, add 1 pound of shredded cooked chicken (or your favorite rotisserie chicken) along with ¼ cup of ranch dressing, your cooled buffalo sauce, a handful of thinly sliced green onions, 8 ounces of softened cream cheese, and 8 ounces of shredded sharp cheddar cheese. Don’t forget to season it with a pinch of garlic powder or onion powder if you like!
Mix everything together until you have a creamy and cohesive filling. This savory mixture is what makes your Buffalo Chicken Egg Rolls utterly irresistible.
Assemble the Egg Rolls
Assembling is the fun part! Take one egg roll wrapper and place it on a clean surface. With a small bowl of water, moisten the edges of the wrapper to help seal your rolls. Scoop about two tablespoons of the chicken mixture onto one side of the wrapper, then fold it over and roll tightly to seal. Fold in the sides and use more water to ensure your egg roll is perfectly sealed. Repeat this process until all your filling is used up.
Frying Your Egg Rolls to Perfection
Next, it’s frying time! Heat vegetable oil in a Dutch oven or deep skillet over medium to medium-low heat. Carefully place your egg rolls in the hot oil (don’t overcrowd the pan!) and fry until they turn a gorgeous golden brown and become crispy. This usually takes about 3-4 minutes per side. Remember, a lower frying temperature helps the filling heat through without burning the wrappers!
Draining and Ready to Serve
Once they’re golden and crispy, transfer the egg rolls to a plate lined with paper towels to drain any excess oil. Serve them hot with your favorite dipping sauces, like ranch or extra buffalo sauce, and maybe even some carrot sticks and celery for that classic touch!
Enjoy your homemade Buffalo Chicken Egg Rolls—they’re sure to be a crowd-pleaser!

Cooking Tips and Notes for Buffalo Chicken Egg Rolls
Ensuring Crispy Egg Rolls
For the ultimate crispy Buffalo Chicken Egg Rolls, temperature is key. Heat your oil to the right temperature—ideally around 350°F. If it's too hot, the outsides will crisp up while the insides remain undercooked. Also, ensure you don't overcrowd the pan; fry in small batches to allow proper cooking and even browning.
Common Mistakes to Avoid
- Skipping the water: Remember to seal your egg rolls with a little water, or they may unroll while frying.
- Not draining: If you’re using leftover chicken or a moist filling, drain any excess moisture to prevent sogginess.
- Using low-fat cheeses: They might not melt as well, affecting the texture. Opt for full-fat cream cheese and shredded cheddar for the best flavor.

Instructions
Instructions
- Make your buffalo sauce. Heat a small skillet with hot sauce, butter, Worcestershire, cayenne, salt and pepper. Whisk until melted and everything is combined. Set aside until use.
- Get your mixture ready. In a mixing bowl, shred your cooked chicken and add in the bowl. Then toss in your sliced green onions, buffalo wing sauce, ranch dressing, salt, pepper, garlic or onion powder, shredded cheddar cheese and softened cream cheese. Toss to completely combine into one mixture.
- Make your egg rolls. Take a small bowl of water and brush all sides of your egg roll wrapper. Place your buffalo chicken filling off to the side of your egg roll and roll over to seal. Then take both sides of the egg roll wrapper and cover the sealed area, and then fold over until completely wrapped and covered.
- Fry! In the meantime, you can start to heat up your neutral oil in a deep skillet for frying.
- When all your egg rolls are prepped, fry on medium to medium low heat until completely crispy, and the egg roll wrappers are cooked through and are golden brown. Fry in batches to not overcrowd the pan. We don’t want to fry this on high since it will burn and crisp only the outside of the wrapper, without fully frying all parts of the inside wrapper as well.
- Set aside on paper towels.
- Serve with dipping sauces of choice (we are using buffalo sauce and ranch), finish with celery, carrots and chopped parsley to garnish.
