For the potatoes
- 3 lb potatoes cut into 1-inch chunks for even grilling
- 3 tablespoon olive oil preferably Filippio Berio for roasting
- 4 cloves garlic freshly minced for best aroma
- 1 tablespoon Italian seasoning
- ½ teaspoon smoked paprika
- ¼ teaspoon red pepper flakes
- ¾ teaspoon salt
- ½ teaspoon pepper
For the garnish
- ¼ cup parmesan preferably Kraft grated for a salty kick
- 2 tablespoon fresh parsley chopped
Cut your potatoes into 1-inch chunks for even cooking. Mince garlic cloves fresh for better aroma. In a large bowl, combine olive oil, minced garlic, Italian seasoning, smoked paprika, red pepper flakes, salt, and pepper. Whisk to create an aromatic seasoning oil.
Add the potatoes to the bowl with the seasoning mixture and toss until evenly coated. Divide the seasoned potatoes onto sheets of aluminum foil, arranging in a single layer. Fold the foil tightly to create packets.
Preheat the grill to medium-high heat (about 400°F). Place the foil packets directly on the grill grates. Cook for 10-12 minutes, then flip each packet using tongs. Grill for another 10-12 minutes until potatoes are tender.
Open foil packets carefully (watch for the steam!). Sprinkle Parmesan cheese and fresh parsley over the hot potatoes while steaming. Serve directly from the foil packets.
