Berries

  • 8 cups mixed berries fresh or frozen
  • 0.5 cups granulated sugar
  • 2 Tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 0.5 teaspoon pure vanilla extract

Biscuit Topping

  • 1.5 cups all-purpose flour spooned & leveled
  • 0.33 cups granulated sugar
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon salt
  • 6 Tablespoons unsalted butter cold and cubed
  • 0.5 cups buttermilk cold
  • 1 Tablespoon buttermilk for topping before baking
  • 1 Tablespoon coarse sugar for topping before baking

Instructions

  • Preheat the oven to 350°F (177°C) and grease a 9×13-inch pan.
  • In a large bowl, gently fold the berries, sugar, cornstarch, lemon juice, and vanilla extract together until thoroughly combined. Spread filling evenly into prepared pan.
  • Whisk the flour, sugar, baking powder, and salt together in a large bowl. Cut the butter into the mixture until it resembles coarse meal. Slowly drizzle in ½ cup buttermilk, mixing until combined. Flatten dough into sections and cover most of the berries.
  • Brush the top of the biscuit dough with 1 Tablespoon of buttermilk and sprinkle with coarse sugar.
  • Bake for 45-55 minutes, or until golden brown. Cool for 5 minutes before serving.
  • Cover and store leftovers in the refrigerator for up to 5 days.

Notes

For best results, do not prepare ahead of time; freeze the berry filling for up to 3 months if necessary. Individual cobblers can also be made by dividing the filling and topping into ramekins.
