Ingredients
  

Dressing

  • ½ cup basil fresh
  • 3 cloves garlic freshly minced
  • ¾ cup olive oil California Olive Ranch preferred
  • ¼ cup lemon juice
  • 2 tablespoon red wine vinegar Pompeian preferred
  • 2 teaspoon sugar
  • 1 teaspoon salt
  • ½ teaspoon red pepper flakes

Salad

  • 1 lb pasta Barilla rotini preferred
  • 1 pint tomatoes halved lengthwise
  • ½ cup red onion finely diced
  • 12 oz mozzarella balls drained and patted dry
  • cup basil roughly chopped
  • ¼ cup toasted pine nuts
  • 1 tablespoon balsamic glaze for drizzling

Instructions
 

Dressing Preparation

  • Combine the basil, garlic, olive oil, lemon juice, red wine vinegar, sugar, salt, and red pepper flakes in a blender. Blend for 2 minutes until the dressing is smooth.

Pasta Cooking

  • Bring a large pot of salted water to a rolling boil and add the pasta. Cook for 7 to 8 minutes until al dente.

Preparation of Ingredients

  • While the pasta cooks, halve the tomatoes lengthwise, finely dice the red onion, and pat the mozzarella dry.

Mixing Salad

  • Transfer the cooled pasta to a large mixing bowl. Pour the basil vinaigrette over the pasta and toss gently to coat. Add the tomatoes, red onion, and mozzarella, and fold everything together.

Serving

  • Transfer the pasta salad to a serving bowl. Top with fresh basil and toasted pine nuts, and drizzle with balsamic glaze just before serving.

Notes

Let the salad sit for 5-10 minutes before serving for best flavor.
