Ingredients
  

Main Ingredients

  • 1 cup cream cheese Needs to be softened before use.
  • ½ cup sugar
  • 2 large eggs At room temperature.
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour Can substitute with whole wheat flour.
  • 1 tablespoon baking powder
  • ½ teaspoon salt

Additional Ingredients

  • 1 cup blueberries Fresh or frozen.
  • ½ cup milk

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan with oil or line it with parchment paper.
  • In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
  • Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until well combined.
  • In another bowl, mix together the all-purpose flour, baking powder, and salt. Gradually add this to the cream cheese mixture until just combined.
  • Pour in the milk and gently fold it into the batter until smooth.
  • Carefully fold in the blueberries.

Baking

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Cooling and Serving

  • Let the bread cool in the pan for about 10 minutes before turning it out onto a wire rack to cool completely.
  • Slice and serve!

Notes

To enhance the flavor, try adding a dusting of powdered sugar or a drizzle of honey before serving. Store in an airtight container in the refrigerator for up to a week or freeze for up to three months.
