Dough Ingredients

  • 1.5 cups warm milk or water (110 to 115°F)
  • 1 tablespoon brown sugar
  • 1 package active dry yeast (0.25-ounce)
  • 4.5 cups all-purpose flour plus more if needed
  • 2 tablespoons melted butter plus extra for brushing
  • 1 teaspoon fine sea salt

Boiling Solution

  • 9 cups water
  • cup baking soda

Finishing Touches

  • 1 large egg whisked with 1 tablespoon water
  • pretzel salt or coarse sea salt for sprinkling

Instructions
 

Making the Pretzel Bites

  • Whisk together the warm milk and sugar in a large mixing bowl. Sprinkle the yeast on top and wait 5 minutes for the yeast to foam up and activate.
  • Add the flour, melted butter and salt. Mix until combined, then knead the dough for about 4 minutes until it is smooth.
  • Transfer the dough to a lightly-oiled bowl, cover with a damp towel, and let the dough rest for 20 to 30 minutes in a warm place until it has doubled in size.
  • Preheat the oven to 450°F. Line two baking sheets with parchment paper. Combine the water and baking soda in a pot and bring to a boil.
  • Divide the dough into 12 equal pieces. Roll each piece into ¾-inch ropes and cut into 1-inch pieces.
  • Carefully transfer the bites into the boiling water, for about 30 seconds per batch. Place them on the parchment-lined pan.
  • Brush the tops with the egg wash and sprinkle with coarse sea salt.
  • Bake until golden brown, about 12 to 14 minutes. Transfer to a wire cooling rack.
  • If desired, brush with extra melted butter immediately after baking.
  • Serve warm and enjoy!

Notes

These pretzel bites are best served warm and freshly baked.
