Season the brisket generously with salt, black pepper, smoked paprika, garlic powder, onion powder, and chili powder if desired. Rub thoroughly and let sit for 30 minutes.
Heat olive oil in a large skillet over medium-high heat. Sear the brisket on all sides until a deep, golden crust forms.
Place the brisket in the slow cooker. Scatter sliced onion and minced garlic over the top.
In a bowl, mix beef broth, barbecue sauce, Worcestershire sauce, Dijon mustard, and brown sugar. Pour the mixture over the brisket.
Cook on low for 8-9 hours.
Remove the brisket and set aside. In a pan, melt butter over medium heat; stir in brown sugar, beef drippings, and Worcestershire sauce. Cook until syrupy.
Brush the glaze over the brisket and return to the slow cooker for another hour.
Shred the brisket with forks. Serve hot, drizzling extra caramel sauce over the top.
