Ingredients
  

  • 32 ounce frozen corn kernels
  • 2 jalapeno peppers seeded and chopped
  • ¼ cup salted butter
  • 8 ounce cream cheese cubed
  • 2 cups shredded Cheddar cheese divided
  • ½ cup heavy cream
  • salt to taste
  • freshly ground black pepper to taste

Instructions
 

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Melt butter in a saucepan over medium heat. Add cream cheese, 1 cup Cheddar cheese, and heavy cream; cook and stir until melted and smooth. Stir in corn and jalapenos. Season with salt and pepper.
  • Remove from heat and pour into a 9x13-inch baking dish. Sprinkle evenly with remaining cheese; cover with foil.
  • Bake in the preheated oven for 20 minutes. Remove foil and bake until cheese is bubbly, about 5 minutes. Serve immediately.
