Ingredients
  

For the chicken cutlets

  • 2 breasts chicken
  • 1 large egg whisked with a splash of milk
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 0.5 cup breadcrumbs
  • 0.5 cup Panko
  • Vegetable oil for frying

For the garlic butter

  • 4 Tablespoons salted butter slightly melted
  • 2 Tablespoons mayo
  • 2-3 cloves garlic minced
  • 2-3 Tablespoons chopped fresh parsley
  • 0.25 cup finely grated Parmesan

For the Caesar dressing

  • 0.5 cup mayo
  • 0.25 cup sour cream or Greek yogurt
  • 0.25 cup finely grated parmesan cheese
  • 1 Tablespoon lemon juice
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon anchovy paste
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic grated
  • Salt & pepper to taste

To assemble

  • 3-4 cups romaine lettuce chopped or shredded

Preparation

  • Make the chicken cutlets. Slice the chicken breasts in half horizontally to make 4-6 thin cutlets. Whisk an egg with milk, garlic powder, salt, and pepper. Dip chicken in egg and then breadcrumbs, and fry in vegetable oil over medium-high heat until golden brown (about 5 minutes). Set aside on paper towel.
  • In a small bowl, combine all ingredients for garlic butter. Split bread in half lengthwise and spread garlic butter inside. Toast in a 450ºF oven or under broiler for 3-4 minutes.
  • Whisk all ingredients for the dressing in a bowl or mason jar. In a large salad bowl, toss 3-4 tablespoons of the dressing with the chopped romaine.
  • Build the sandwich by layering chicken cutlets, salad, and extra grated parmesan cheese on the bread. Enjoy immediately!
