Ingredients
  

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cups unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt

Wet Ingredients

  • 6 tablespoon unsalted butter at room temperature
  • 0.5 cups mascarpone or full-fat sour cream, full-fat yogurt, or labne
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 granulated sugar
  • 0.25 cups light brown sugar lightly packed
  • 0.5 cups Demerara sugar for pan and topping

Bananas

  • 5 extremely ripe ripe bananas 4 coarsely mashed and 1 sliced lengthwise

Preparation Steps

  • Preheat the oven to 350F. Spray a 9 x 5-inch loaf pan with a nonstick spray. Sugar the inside of the pan with ¼ cup of the Demerara sugar, tapping out any excess.
  • In a medium bowl, whisk the flour, cocoa powder, baking soda and salt together; set aside.
  • Using an electric mixer, beat the butter, granulated sugar, light brown sugar and vanilla on high speed until super light and fluffy, about 3 to 5 minutes. Add the egg, and beat until well combined, about 2 minutes.
  • With the mixer on low, slowly add the dry ingredients and beat just to blend. Fold in the mashed bananas and mascarpone.
  • Pour the batter into the prepared loaf pan and smooth the top. Place the banana halves, cut-side up, on top and sprinkle with the remaining ¼ cup Demerara sugar.
  • Bake until the sides start to pull away and the center springs back slightly, about 90 to 100 minutes.
  • Let cool completely before slicing.

Notes

For best results, use full-fat dairy products. This recipe creates a very moist and dense bread closer to a cake consistency.
