Noodles
- 6 oz No Yolks Whole Grain Extra Broad Noodles
Sauce
- 2 tablespoon butter
- 5 cloves garlic minced
- 2.5 cups whole milk
- 14 oz fire roasted tomatoes drained
- 2.5 cups spinach
- 2 tablespoon cornstarch
- 1 teaspoon salt
- 0.5 teaspoon pepper add more or less to taste
Protein and Cheese
- 2 cups shredded chicken rotisserie chicken works well
- 1.25 cups shredded Parmesan cheese divided
Cooking Instructions
In a large saucepan, bring 3 quarts of water to a boil. Add noodles and cook for 10 minutes.
In a large skillet, add butter and garlic. Cook over medium heat until garlic just starts to brown. Stir in milk, tomatoes, spinach, cornstarch, salt and pepper. Simmer for about 5 minutes or until spinach wilts and sauce thickens.
Stir in noodles, chicken, and ¾ cup shredded cheese. Bring back to a simmer over medium-low heat and cook until cheese is melted.
Remove from heat and top remaining shredded cheese right before serving.
