Ingredients
  

Noodles

  • 6 oz No Yolks Whole Grain Extra Broad Noodles

Sauce

  • 2 tablespoon butter
  • 5 cloves garlic minced
  • 2.5 cups whole milk
  • 14 oz fire roasted tomatoes drained
  • 2.5 cups spinach
  • 2 tablespoon cornstarch
  • 1 teaspoon salt
  • 0.5 teaspoon pepper add more or less to taste

Protein and Cheese

  • 2 cups shredded chicken rotisserie chicken works well
  • 1.25 cups shredded Parmesan cheese divided

Cooking Instructions

  • In a large saucepan, bring 3 quarts of water to a boil. Add noodles and cook for 10 minutes.
  • In a large skillet, add butter and garlic. Cook over medium heat until garlic just starts to brown. Stir in milk, tomatoes, spinach, cornstarch, salt and pepper. Simmer for about 5 minutes or until spinach wilts and sauce thickens.
  • Stir in noodles, chicken, and ¾ cup shredded cheese. Bring back to a simmer over medium-low heat and cook until cheese is melted.
  • Remove from heat and top remaining shredded cheese right before serving.
