Ingredients
  

Bang Bang Sauce

  • cup plain Greek yogurt or mayonnaise
  • 4 tablespoon sweet chili sauce
  • 2 teaspoon sriracha

For the Salmon Bites

  • 1 tablespoon avocado oil for cooking
  • 1 lb salmon filet chopped into bite-sized chunks
  • ½ cup coconut aminos *
  • 1 tablespoon rice vinegar
  • 2 large cloves garlic minced
  • 1 teaspoon sriracha optional
  • 2 teaspoon toasted sesame oil optional

For the Bowls

  • 1 Batch Asian Cucumber Salad
  • 3 cups cooked brown rice
  • 1 large head broccoli chopped into florets
  • 1 large ripe avocado sliced

Instructions
 

Preparation

  • Prepare the cucumber salad by adding all of the ingredients to a small bowl and allowing it to sit for at least 15 minutes.
  • Cook the rice according to the package instructions, using 1 cup of dry rice for two people.
  • While the rice is cooking, prepare the bang bang sauce by stirring together the ingredients in a small bowl until well-combined. Refrigerate the sauce until ready to use.
  • Steam, sauté, or roast the broccoli according to your preference.

Cooking the Salmon

  • Combine the coconut aminos, rice vinegar, minced garlic, sriracha, and sesame oil in a small bowl and stir together until well-combined.
  • Cut the salmon filet into bite-sized cubes, removing skin if desired.
  • Heat 1 tablespoon of avocado oil in a skillet over medium-high heat until sizzling hot.
  • Place salmon chunks skin side down in the skillet and cook undisturbed for 2-3 minutes until golden-brown. Flip and cook for another 1-2 minutes.
  • Pour the sauce into the skillet and cook, flipping every few minutes, until fully glazed and cooked through, about 4-5 minutes.

Assembling the Bowls

  • Add rice to two large bowls, then top with cucumber salad, sautéed broccoli, and avocado. Divide the cooked salmon bites between each bowl and drizzle with bang bang sauce.
  • Optionally drizzle with additional coconut aminos or teriyaki sauce, and sprinkle with green onions and sesame seeds.

Notes

You can replace coconut aminos with low-sodium soy sauce or liquid aminos. Store leftovers in separate airtight containers for up to 5 days.
