  • 2 lb yellow baby potatoes halved or quartered into 1-inch pieces
  • 4 tablespoon extra virgin olive oil
  • 1 ¼ teaspoon sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ¾ teaspoon smoked paprika
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon fresh lemon juice
  • 2 tablespoon chopped fresh parsley

Cooking Steps

  • Halve or quarter the baby potatoes into 1-inch pieces. In a large bowl, combine olive oil, sea salt, garlic powder, dried oregano, dried thyme, smoked paprika, black pepper, and red pepper flakes. Toss potatoes in the mixture and let sit for 5 minutes.
  • Preheat your grill to medium-high heat (around 400°F). Allow it to heat for at least 5-10 minutes.
  • Spread the seasoned potatoes directly on the grill grates, cut-side down. Close the lid and cook for 10 minutes. Turn the potatoes over and cook for another 10 minutes until tender and golden.
  • Transfer grilled potatoes to a serving bowl. Drizzle with fresh lemon juice and toss gently. Garnish with chopped fresh parsley.

Notes

For even cooking, try to keep potatoes uniform in size.
