Preparation

  • Preheat your oven to 425°F and lightly oil a baking sheet or skillet.
  • Pound the chicken breasts to an even ½-inch thickness and pat them dry with a paper towel.
  • Mix together mayonnaise, Dijon mustard, fresh lemon juice, and half of the garlic powder; brush this mixture onto each chicken breast.
  • Combine the remaining garlic powder, Parmesan, panko, Italian seasoning, paprika, kosher salt, and black pepper in a bowl.
  • Coat each chicken breast in the crumb mixture, pressing down to ensure the crumbs adhere.
  • Heat olive oil and optionally a bit of butter in a skillet over medium-high heat; sear the coated chicken for 2-3 minutes on each side.
  • Transfer the skillet to the oven; bake for 8-10 minutes, ensuring the internal temperature reaches 165°F.
  • Rest the chicken for 5 minutes once removed from the oven, then garnish with freshly chopped parsley.

Notes

Serve with a wedge of lemon for an extra zesty kick. Store leftovers in an airtight container for up to 3-4 days.
