Ingredients
  

  • ½ cup neutral oil
  • ½ cup granulated sugar
  • 2 large eggs
  • ¾ cup ripe bananas, mashed about 2 ripe bananas
  • 1 ¼ cups buckwheat flour
  • 2 teaspoons baking powder
  • 1 pinch salt
  • cup chopped walnuts

Instructions
 

  • Preheat the oven to 350°F. Lightly grease a small loaf pan.
  • Whisk together the oil, sugar, eggs, and mashed bananas until smooth.
  • Add buckwheat flour, baking powder, and salt. Stir gently until combined.
  • Fold in the chopped walnuts.
  • Pour batter into the prepared loaf pan and spread evenly.
  • Bake for 40 to 45 minutes, or until a toothpick comes out clean.
  • Cool in pan for 10 to 15 minutes before slicing and serving.

Notes

Use very ripe bananas for best flavor. Do not overmix the batter. Store covered at room temperature for 2 days or refrigerate longer.
