Ingredients
  

  • 1.5 tablespoon olive oil divided
  • 1.25 lb. boneless skinless chicken breast thinly sliced
  • 1 large yellow onion thinly sliced
  • 3 medium bell peppers thinly sliced - I used a red, orange and yellow
  • 4 cloves garlic minced - or 1 tablespoon minced
  • 2 tablespoon ranch seasoning mix
  • 1 teaspoon salt or to taste
  • ½ teaspoon ground pepper or to taste
  • ¾ cup shredded white cheddar cheese

Instructions
 

  • Spray a large skillet with cooking spray and add ¾ tablespoon of the olive oil. Set to medium-high heat.
  • Add the chicken and cook, stirring occasionally, for 6-8 minutes or until golden brown. Transfer the chicken to a plate and wipe the skillet down if needed.
  • Reduce heat to medium. Spray the skillet with cooking spray and add the remaining olive oil. Add the onions, peppers, garlic, ranch seasoning mix, salt and pepper. Sauté the vegetables until tender.
  • Stir the cooked chicken back into the skillet. Taste test and add more salt, pepper, or seasoning as needed. Remove from heat.
  • Sprinkle it with shredded cheese and cover the skillet until the cheese has melted.
  • Serve in a hoagie or wrap, pair with some veggies or rice, or eat over a bed of greens.

Notes

To make dairy-free: sub ranch seasoning mix for 2 teaspoon Italian seasoning, ½ teaspoon paprika and salt and pepper to taste. Sub cheese for dairy-free alternative or omit completely.
