Dry Ingredients

  • 1.5 cups all-purpose flour spooned and leveled
  • 2 tablespoons sugar
  • 1 tablespoon aluminum-free baking powder important to level
  • 0.5 teaspoon fine sea or table salt reduce to ¼ teaspoon if sensitive

Wet Ingredients

  • 1.25 cups milk dairy or non-dairy
  • 1 large egg
  • 5 tablespoons unsalted butter plus more for skillet
  • 2 teaspoons vanilla extract reduce if sensitive

Preparation

  • Melt the butter and set it aside to cool slightly.
  • In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  • Create a well in the center of your dry ingredients. Pour the milk mixture into the well and gently whisk until just incorporated.
  • Place a skillet over medium heat. Check readiness by sprinkling water on the surface.
  • Brush the skillet with melted butter. Scoop and spread the batter into circles.
  • Cook for 1-2 minutes until edges are dry, then flip and cook until browned.

Notes

Store cooked pancakes in an airtight container for up to a week, or freeze for up to two months. Serve warm with syrup and toppings.
