Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground beef or 1.5 cups cooked, shredded chicken
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 2 cups uncooked long-grain white rice
  • 4 cups chicken broth
  • 1 can (10 ounce) diced tomatoes and green chilies, undrained
  • 1 cup frozen corn
  • 1 cup shredded Monterey Jack cheese
  • ½ cup shredded cheddar cheese
  • ¼ cup chopped fresh cilantro for garnish

Instructions
 

  • Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the ground beef and cook until browned. Drain off any excess fat.
  • Add the chopped onion to the skillet and cook until softened, about 3 minutes.
  • Stir in the taco seasoning mix and cook for 1 minute until fragrant.
  • Add the uncooked rice, chicken broth, diced tomatoes with green chilies, and frozen corn to the skillet. Stir everything together well.
  • Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet tightly, and simmer for 18 to 20 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
  • Remove the skillet from the heat. Let it stand, covered, for 5 minutes.
  • Remove the lid and stir in the Monterey Jack cheese and cheddar cheese until melted and creamy.
  • Serve immediately, garnished with fresh cilantro.

Notes

For a make-ahead option, prepare the casserole through step 5, cover, and refrigerate. Reheat slowly on the stovetop or bake covered at 350°F until heated through. If using cooked chicken instead of ground beef, skip step 1 and add the cooked chicken in step 6 along with the cheese. Use your favorite type of shredded cheese blend for different flavor profiles.
