Chicken and Vegetables

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup shredded carrots
  • ½ cup chopped red bell pepper
  • ¼ cup chopped fresh cilantro
  • 8 large flour tortillas or butter lettuce cups

Peanut Sauce

  • ½ cup creamy peanut butter
  • ¼ cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons lime juice fresh
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon grated fresh ginger
  • 1 clove garlic minced
  • ¼ cup hot water (to thin sauce)

  • Season chicken breasts lightly with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-8 minutes per side until fully cooked (internal temperature reaches 165°F/74°C). Remove chicken and let it rest for 5 minutes.
  • While the chicken rests, prepare the peanut sauce. In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, ginger, and garlic. Gradually whisk in the hot water until the sauce reaches a smooth, pourable consistency.
  • Shred or dice the cooked chicken. In a medium bowl, combine the shredded chicken, carrots, red bell pepper, and cilantro.
  • Pour about half of the peanut sauce over the chicken and vegetable mixture. Toss gently to coat everything evenly. Add more sauce if needed, reserving some for serving.
  • Warm the tortillas briefly if desired. Place a portion of the chicken filling down the center of each tortilla or lettuce cup.
  • Roll or fold the wraps tightly. Serve immediately with any remaining peanut sauce on the side for dipping or drizzling.

Notes

For grilled chicken, marinate the chicken briefly in lime juice and a dash of soy sauce before grilling. Shred after cooking. If you prefer a thinner sauce, add a little more hot water, one teaspoon at a time. You can substitute shredded cabbage for carrots or bell pepper for added crunch.
