French Onion Potato Bake

Ingredients
  

  • 2.5 lbs Russet Potatoes Washed, about 3 large or 5-6 small
  • 4 tablespoons Salted Butter
  • 1 tablespoon All Purpose Flour
  • 2 teaspoons Salt
  • ½ teaspoon Black Pepper
  • 1 cup Heavy Cream
  • 1 cup Whole Milk
  • ½ cup Finely Grated Parmesan
  • 1 cup Grated Cheddar Cheese
  • 1.5 cups Grated Gruyere Cheese
  • 1 tablespoon Olive Oil
  • 1 large Red Onion Peeled and sliced into ¼ in. slices
  • 1 large Yellow Onion Peeled and sliced into ¼ in. slices
  • 2 cloves Garlic Minced
  • 1 tablespoon Red Wine Preferably Cabernet Sauvignon
  • ¼ teaspoon Dried Thyme
  • 1 tablespoon Fresh Parsley Minced

Instructions
 

  • Preheat the oven to 400 degrees. Peel, then slice the potatoes with a mandoline. Set aside, do NOT soak.
  • In a large dutch oven over medium low heat, melt 2 tablespoons of butter. Sprinkle in the flour and stir to combine.
  • Pour in the milk and heavy cream, plus 1 teaspoon salt and ¼ teaspoon pepper. Warm without boiling. Stir until steam comes off.
  • Reduce heat to low and stir in ⅔ of the cheese until melted. Combine with the potatoes and transfer to a casserole dish. Cover tightly with foil.
  • Bake in the oven for 40 minutes.
  • For the caramelized onion topping, in a clean dutch oven over medium low heat, melt remaining 2 tablespoons of butter and 1 tablespoon olive oil.
  • Add onions, 1 teaspoon salt, ¼ teaspoon black pepper, and ¼ teaspoon dried thyme. Cook for 15 minutes, stirring once halfway.
  • Uncover and stir. Cover again for 5 minutes. Add garlic and wine, cook for 3-5 minutes.
  • After 40 minutes of baking, remove potatoes. Sprinkle onions on top and cover with remaining cheese. Return to oven for 20 minutes.
  • Tent with foil and rest for 15 minutes before slicing into squares and serving.

Notes

Slice the potatoes very thin on the mandoline. Shred cheese fresh from the block for better melting.
