For the Garlic Herb Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon butter

For the Mashed Potatoes

  • 4 large russet potatoes, peeled and cubed
  • ½ cup milk (or more to taste)
  • 3 tablespoons butter
  • Salt to taste
  • Optional: cracked black pepper or chopped chives

For the Glazed Carrots

  • 4 large carrots, sliced into rounds
  • 2 tablespoons butter
  • 1 tablespoon brown sugar
  • ½ teaspoon salt
  • Optional: dash of cinnamon or nutmeg for warmth

  • Bring a large pot of salted water to a boil. Add your peeled and cubed potatoes and cook for about 15–20 minutes or until fork-tender.
  • Drain and return the potatoes to the pot. Add butter, milk, and a generous pinch of salt. Mash until creamy and smooth.
  • Season both sides of the chicken breasts with salt, pepper, thyme, rosemary, and paprika. Heat olive oil in a skillet over medium heat. Add garlic and sauté just until fragrant.
  • Carefully place the chicken in the pan and cook for about 5–6 minutes per side until golden and fully cooked through.
  • In a separate pan, add sliced carrots, butter, brown sugar, and salt. Cook over medium heat for 10–12 minutes, stirring often, until the carrots are tender and the glaze is thick and shiny.
  • Plate each dish with a generous scoop of mashed potatoes, a portion of glazed carrots, and one juicy garlic herb chicken breast. Serve warm, and watch smiles appear around your table.

Notes

You can easily double this recipe for a larger gathering. To make it dairy-free, substitute the butter and milk in the potatoes and carrots with plant-based alternatives.
