Equipment

  • blender
  • Freezer-safe container
  • Parchment paper

Ingredients

  • 2 ¼ cups watermelon seedless, cut into 1-inch cubes
  • 2 cups strawberries hulled and halved
  • 2 tablespoons lemon juice
  • 1 tablespoon honey or agave nectar
  • 1 pinch sea salt

Instructions

  • Cut the watermelon into 1-inch cubes and hull the strawberries, halving them for easier blending. Spread the prepared fruit on a parchment-lined baking sheet in a single layer and freeze for 3-4 hours until solid.
  • Transfer the frozen watermelon and strawberry pieces to a blender. Add the lemon juice, honey, and sea salt. Blend on high speed for 3-5 minutes, stopping occasionally to scrape down the sides, until you achieve a completely smooth, creamy texture.
  • Transfer the blended mixture to a shallow pan or freezer-safe container and freeze for 45-60 minutes until it reaches a scoopable consistency.
  • Remove from the freezer and let thaw for 2-3 minutes before serving.

Notes

Freezing the fruit ahead is essential—it creates the sorbet's smooth, creamy texture without requiring an ice cream machine.
