  • Heat olive oil or butter in a pan over medium heat and sauté onion and celery until soft, then add garlic and cook until fragrant.
  • In a large bowl, combine stuffing mix, sautéed vegetables, chopped turkey, and dried cranberries.
  • Gradually add chicken broth while mixing, then add eggs and combine until the mixture holds together.
  • Season with salt, pepper, and parsley, mixing evenly.
  • Shape the mixture into 1 to 1.5-inch balls, pressing gently to hold form.
  • Chill the balls in the refrigerator for 20–30 minutes for better structure.
  • Cook by pan-frying in oil until golden brown on all sides or bake at 375°F (190°C) for 20–25 minutes.
  • Serve warm with cranberry sauce or gravy for best flavor.

Notes

Chilling the mixture helps the balls hold their shape during cooking. Avoid adding too much broth to prevent soggy texture. For extra crispiness, bake then broil for 2–3 minutes at the end.
