Ingredients
  

Beef and Vegetables

  • 1.5 lbs flank steak or sirloin, thinly sliced against the grain
  • 1 tablespoon avocado oil or coconut oil
  • 1 medium onion, sliced
  • 2 count bell peppers (any color), sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • ½ cup beef broth
  • ¼ cup tamari or coconut aminos
  • 1 tablespoon rice vinegar (sugar-free)
  • 1 teaspoon sesame oil
  • ½ teaspoon xanthan gum
  • ¼ teaspoon black pepper
  • 1 tablespoon avocado oil (for cooking vegetables)
  • ¼ cup sliced mushrooms Optional

Cooking Steps

  • In a bowl, toss the sliced beef with 1 teaspoon of tamari or coconut aminos. Set aside.
  • In a small bowl, whisk together the beef broth, remaining tamari/coconut aminos, rice vinegar, sesame oil, black pepper, and xanthan gum until the gum is fully dissolved and no lumps remain. Set the sauce aside.
  • Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat. Add the beef in batches, ensuring not to overcrowd the pan. Cook quickly until browned, about 1-2 minutes per side. Remove the beef and set it aside.
  • Add the remaining 1 tablespoon of oil to the skillet. Add the sliced onions and bell peppers. Stir-fry for 3-4 minutes until they start to soften but remain crisp.
  • Add the minced garlic and grated ginger to the vegetables. Cook for 1 minute until fragrant.
  • Return the cooked beef to the skillet with the vegetables.
  • Pour the prepared sauce mixture over the beef and vegetables. Bring the mixture to a simmer, stirring constantly. The sauce will thicken rapidly due to the xanthan gum. Cook for about 1 minute until the sauce coats the ingredients.
  • Remove from heat immediately. Serve hot over cauliflower rice.

Notes

For a richer flavor, you can marinate the beef in the initial 1 teaspoon of tamari for 30 minutes before cooking. If you prefer not to use xanthan gum, reduce the sauce mixture until it thickens naturally, which will take longer and may result in a thinner sauce. Serve this dish over steamed cauliflower rice to keep the meal fully keto-compliant.
