Ingredients
  

Lobster and Pasta

  • 1-1 ½ lbs cooked lobster meat
  • 1 lb corkscrew pasta

Cheese Sauce

  • 4 tablespoon unsalted butter
  • 3 cloves garlic pressed
  • tablespoon all purpose flour
  • 4 cups whole milk or 2%
  • ¾ cup heavy whipping cream or half and half
  • 1 teaspoon ground mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • 1 ½ teaspoon salt adjust to taste
  • 8 oz Fontina cheese block
  • 8 oz sharp white cheddar cheese block
  • 6 oz Monterrey Jack cheese block

Topping

  • ¾ cup Panko bread crumbs
  • 1 tablespoon minced parsley
  • ½ teaspoon garlic powder
  • 2 tablespoon unsalted butter melted
  • salt to taste

Instructions
 

Cooking Lobster

  • Bring a large pot of water to boil and season with salt and peppercorns. Submerge lobsters and cover to cook until bright red.
  • Remove lobsters and let them cool down before taking out the meat.
  • Twist off the tail and claws, and using kitchen shears, take out the meat. Chop into smaller pieces.

Cooking Lobster Tails

  • Preheat the oven to 450°F and prepare a baking sheet with parchment paper. Mix butter, salt, lemon juice, and garlic.
  • Butterfly the lobster tail shell and separate the meat from the sides. Bake for 10 minutes.
  • Cool and chop the lobster tail meat.

Making Mac and Cheese

  • Cook corkscrew pasta in salted boiling water until al dente.
  • Melt butter in a large pot, add garlic, then whisk in flour until it's a pasty blend. Gradually stir in milk.
  • Stir in spices and add cheese gradually while stirring until melted and smooth.
  • Combine cheese sauce with pasta and fold in chopped lobster meat. Transfer to a greased baking dish.
  • Combine Panko, parsley, salt, and garlic powder with melted butter and spread over pasta mixture. Bake for 20 minutes.

Notes

For this dish, prepare about a pound to a pound and a half of lobster meat. Consider using refrigerated lobster meat to save time.
