Equipment

  • large skillet
  • 10-inch cast iron skillet or broiler-safe high-sided skillet

Ingredients

Bacon and Potatoes

  • 8 slices bacon cut crosswise into ¼-inch-wide pieces
  • 2.5 pounds Gold potatoes peeled and diced
  • ¾ cup mayonnaise
  • 6 ounces mild yellow cheddar cheese shredded, divided
  • 4 cloves garlic minced
  • 1 tablespoon Dijon mustard
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon finely chopped fresh chives (about ½ bunch)

Instructions

Preparation

  • Heat the oven to 400ºF. Cook the bacon in a large skillet over medium heat until crisp, about 8 to 10 minutes. Transfer to a small bowl.
  • In a large bowl, stir together the diced potatoes, mayonnaise, 3 ounces of the shredded cheddar cheese, minced garlic, Dijon mustard, kosher salt, and black pepper. Stir in ½ cup of the cooked bacon.
  • Transfer the mixture to a 10-inch skillet and spread it into an even layer. Bake for about 1 hour or until the potatoes are tender.
  • Remove from the oven, turn on the broiler, and top with the remaining cheddar cheese. Broil for 2 to 3 minutes until the cheese is melted and browned.
  • Let cool for 10 minutes and garnish with the remaining bacon and fresh chives.
