Ingredients
  

Dry Ingredients

  • 1 cup almond flour
  • ½ cup oat flour
  • cup vanilla plant based protein powder *
  • ¼ teaspoon fine sea salt

Wet Ingredients

  • ½ cup cashew butter or almond butter
  • ¼ cup pure maple syrup or honey
  • 1 teaspoon vanilla extract
  • ¼-1/2 teaspoon almond extract
  • 2-4 tablespoon sprinkles
  • 1 tablespoon unsweetened vanilla almond milk if needed to moisten dough

Preparation Steps

  • Place almond flour, oat flour, protein powder, 1-2 tablespoon sprinkles, and salt in a medium mixing bowl. Whisk to combine.
  • Add cashew/almond butter, maple syrup, vanilla, and almond extract. Stir to combine until dough feels like moist cookie dough. If dry, add 1 tablespoon milk.
  • Roll into 14-16 balls. Press or roll each ball into remaining sprinkles. Store in fridge or freezer.

Notes

Almond extract really enhances the birthday cake flavor; omitting it will reduce that effect. Alternatives for protein powder can include dry milk powder or more oat flour.
