Ingredients
  

Chicken and Seasoning

  • 4 pieces boneless skinless chicken breasts
  • 2 tablespoons butter
  • salt and pepper to taste
  • 2 teaspoons Italian seasoning

Rice Ingredients

  • 1 cup uncooked white rice
  • 2.25 cups chicken broth (low sodium recommended)
  • 1 piece juice of lemon
  • 1 teaspoon Italian seasoning

Cooking Steps

  • Melt butter over medium heat in a large skillet or pan. Season chicken with salt, pepper, and Italian seasoning. Brown chicken for 1-2 minutes on each side. Transfer chicken to a plate.
  • Add rice, chicken broth, lemon juice, and remaining Italian seasoning to the pan. Place chicken on top, then cover and simmer over medium-low heat for 20-25 minutes.
  • Garnish with fresh parsley or cilantro and lemon wedges if desired. Serve immediately.

Notes

Cooking with bone-in, skin-on chicken requires increased browning time and ensure internal temperature reaches 165°F before serving. For brown rice, extend cooking time to 30-35 minutes.
