  • 1 pound fresh radishes, trimmed and halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon lemon juice

  • Preheat your oven to 425°F (220°C).
  • Rinse the radishes under cold water. Trim the tops and roots, then cut them in half.
  • In a large bowl, combine the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Stir until well mixed.
  • Toss the halved radishes in the bowl with the herb mixture until they are evenly coated.
  • Spread the coated radishes in a single layer on a baking sheet lined with parchment paper.
  • Place the baking sheet in the preheated oven and roast for 20 minutes or until the radishes are tender and slightly caramelized.
  • Once roasted, remove the radishes from the oven and drizzle with lemon juice. Toss gently to combine.
  • If desired, sprinkle with fresh parsley for added color and flavor.
