Ingredients
  

Potatoes

  • 6 medium russet or sweet potatoes

Meat and Vegetables

  • 1.5 pounds lean ground beef or turkey
  • 0.5 cup chopped onion
  • 2 large carrots, chopped small about 1 cup
  • 2 cloves garlic, minced or ½ teaspoon garlic powder
  • 1 teaspoon salt coarse, kosher salt preferred
  • 0.5 teaspoon black pepper coarsely ground black pepper preferred
  • 0.25 cup all-purpose flour
  • 2 tablespoons tomato paste
  • 2.5 cups low sodium beef or chicken broth
  • 1 tablespoon Worcestershire sauce
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon dried thyme
  • 0.5 cup frozen corn kernels
  • 0.5 cup frozen peas
  • 1-2 cups shredded sharp cheddar cheese

Instructions
 

Preparation and Cooking

  • Preheat the oven to 400 degrees F. Lay out six pieces of aluminum foil and rub butter over the center of the foil. Sprinkle salt and pepper over the butter.
  • Place a potato in the center of the butter section and roll up the foil, covering the potato completely. Pierce the potato with a fork and place on a baking sheet.
  • Bake for an hour until the potatoes are tender when pierced with a knife.
  • In a large skillet, cook the ground meat, onion, carrots, garlic, salt, and pepper over medium heat until the meat is no longer pink and the vegetables soften, about 5-7 minutes. Drain excess grease.
  • Sprinkle flour over the meat, then stir in tomato paste, broth, Worcestershire sauce, oregano, and thyme. Simmer for 10 minutes until thickened.
  • Stir in corn and peas, simmer until heated through. Season with salt and pepper to taste.
  • Gently unwrap the potatoes, slice down the middle, top with cheese and Shepherd's Pie filling, and serve immediately.

Notes

Using sweet potatoes with the flavorful meat mixture creates a heavenly combination. Consider using a slow cooker to keep the filling warm as well.
