  • Spread the sliced rhubarb evenly across the bottom of your prepared baking dish.
  • Sprinkle the cinnamon and nutmeg directly over the rhubarb, then scatter the sugar evenly over everything.
  • Pour the dry cake mix directly over the rhubarb and sugar layer.
  • In a small bowl or measuring cup, combine the water and vanilla extract, then drizzle this mixture evenly over the dry cake mix.
  • Melt the butter separately and drizzle it evenly over the top.
  • Cover the baking dish with foil and bake for 45 minutes.
  • Remove the foil and bake uncovered for an additional 15 minutes.
  • Let the dump cake rest for 5-10 minutes before serving.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
